Camel Milk Gelato

What you need

Ingredients

  • 3 cups Camel Milk
  • 1 cup Camel Milk Cream (see Dairy Staples chapter) or Heavy Cream
  • 3/4 cup Sugar
  • 5 large Egg Yolks
  • 1 tsp Vanilla Extract
  • Pinch of Salt

Method

Instructions

  1. Heat the camel milk and cream together until steaming, but not boiling.
  2. Whisk the sugar and egg yolks until pale, then slowly whisk in about a cup of the hot milk mixture to temper.
  3. Return the tempered yolks to the saucepan and cook over low heat, stirring constantly, until thickened enough to coat the back of a spoon, 5 to 7 minutes.
  4. Strain into a bowl, stir in the vanilla and salt, and chill thoroughly, at least 4 hours or overnight.
  5. Churn in an ice cream maker according to the manufacturer's instructions, then freeze until firm.
