Cashew Milk Rice Pudding

Arborio rice slow-cooked in sweetened cashew milk with a whole cinnamon stick.

What you need

  • 1/2 cup Arborio Rice
  • 3 cups Cashew Milk
  • 1 cup Water
  • 1 Cinnamon Stick
  • 1/3 cup Sugar
  • Pinch of Salt
  • 1 tsp Vanilla Extract

Method

Instructions

  1. Combine the rice, cashew milk, water, cinnamon stick, sugar, and salt in a heavy pot.
  2. Bring to a gentle simmer over medium heat, then reduce to low.
  3. Cook, stirring often, for 30 to 35 minutes, until the rice is tender and the mixture has thickened.
  4. Remove the cinnamon stick and stir in the vanilla.
  5. Serve warm or chilled; it thickens further as it cools.
