Brazilian Moqueca (Fish Stew)

What you need

Ingredients

  • 1 1/2 lbs Firm White Fish, cut into pieces
  • 2 tbsp Lime Juice
  • 2 tbsp Dendê (Palm) Oil, or olive oil
  • 1 Onion, sliced
  • 1 Red Bell Pepper, sliced
  • 1 Yellow Bell Pepper, sliced
  • 3 cloves Garlic, minced
  • 2 Tomatoes, chopped
  • 1 can (13.5 oz) Coconut Milk
  • Fresh Cilantro, to finish

Method

Instructions

  1. Toss the fish with lime juice and a pinch of salt; let marinate 15 minutes.
  2. Heat the dendê oil in a wide pot over medium heat and sauté the onion and peppers until softened, about 7 minutes.
  3. Add the garlic and tomatoes and cook 5 minutes until the tomatoes break down.
  4. Reduce heat to low, pour in the coconut milk, and simmer gently 5 minutes.
  5. Nestle the fish into the sauce and simmer 8 to 10 minutes until just cooked through. Finish with cilantro.
