Goat's Milk Biscuits
Southern-style flaky biscuits using goat's milk as the acid.

- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup cold butter, cubed
- 1 cup cold whole goat's milk
Method
Instructions
- Preheat the oven to 450°F and line a baking sheet with parchment.
- Whisk the flour, baking powder, baking soda, and salt together.
- Cut the cold butter into the flour with a pastry cutter or your fingers until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
- Pour in the cold goat's milk and stir just until the dough comes together.
- Turn out onto a floured surface, pat to 3/4-inch thickness, fold over on itself twice for flakiness, and cut into rounds. Bake 15-18 minutes until golden.
