Goat's Milk Fudge

What you need

- 2 cups sugar
- 1 cup whole goat's milk
- 4 tablespoons butter
- 2 cups chopped dark chocolate (or 1 cup maple sugar for maple fudge)
- 1 teaspoon vanilla extract
- Pinch of salt
Method
Instructions
- Line an 8-inch square pan with parchment.
- Combine the sugar, goat's milk, and butter in a heavy saucepan over medium heat, stirring until the sugar dissolves.
- Clip on a candy thermometer and cook, stirring occasionally, until the mixture reaches 235°F (soft-ball stage), about 15-18 minutes.
- Remove from heat and stir in the chocolate, vanilla, and salt until smooth and glossy.
- Pour into the prepared pan and let set at room temperature at least 3 hours before cutting into squares.
