Goat's Milk Fudge

What you need

Ingredients

  • 2 cups sugar
  • 1 cup whole goat's milk
  • 4 tablespoons butter
  • 2 cups chopped dark chocolate (or 1 cup maple sugar for maple fudge)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method

Instructions

  1. Line an 8-inch square pan with parchment.
  2. Combine the sugar, goat's milk, and butter in a heavy saucepan over medium heat, stirring until the sugar dissolves.
  3. Clip on a candy thermometer and cook, stirring occasionally, until the mixture reaches 235°F (soft-ball stage), about 15-18 minutes.
  4. Remove from heat and stir in the chocolate, vanilla, and salt until smooth and glossy.
  5. Pour into the prepared pan and let set at room temperature at least 3 hours before cutting into squares.
