Goat's Milk Gelato

What you need

Ingredients

  • 3 cups whole goat's milk
  • 1 cup goat's milk cream
  • 3/4 cup sugar
  • 5 large egg yolks
  • 1 teaspoon vanilla extract
  • Pinch of salt

Method

Instructions

  1. Heat the goat's milk and cream together in a saucepan over medium heat until steaming, but not boiling.
  2. Whisk the sugar and egg yolks together until pale. Slowly whisk in about a cup of the hot milk mixture to temper the yolks.
  3. Pour the tempered yolks back into the saucepan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon, about 5-7 minutes. Do not let it boil.
  4. Strain into a bowl, stir in the vanilla and salt, and chill thoroughly, at least 4 hours or overnight.
  5. Churn in an ice cream maker according to the manufacturer's instructions until thick and creamy, then freeze until firm.
