Goat's Milk Gelato

- 3 cups whole goat's milk
- 1 cup goat's milk cream
- 3/4 cup sugar
- 5 large egg yolks
- 1 teaspoon vanilla extract
- Pinch of salt
Method
Instructions
- Heat the goat's milk and cream together in a saucepan over medium heat until steaming, but not boiling.
- Whisk the sugar and egg yolks together until pale. Slowly whisk in about a cup of the hot milk mixture to temper the yolks.
- Pour the tempered yolks back into the saucepan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon, about 5-7 minutes. Do not let it boil.
- Strain into a bowl, stir in the vanilla and salt, and chill thoroughly, at least 4 hours or overnight.
- Churn in an ice cream maker according to the manufacturer's instructions until thick and creamy, then freeze until firm.
