Lavender Goat's Milk Pralines

- 1 1/2 cups sugar
- 3/4 cup packed brown sugar
- 1 cup whole goat's milk
- 4 tablespoons butter
- 1 teaspoon dried culinary lavender, finely chopped
- 2 cups pecan halves
- 1 teaspoon vanilla extract
Method
Instructions
- Line two baking sheets with parchment.
- Combine the sugar, brown sugar, goat's milk, butter, and lavender in a heavy saucepan over medium heat, stirring until the sugars dissolve.
- Clip on a candy thermometer and cook, stirring occasionally, until the mixture reaches 235°F (soft-ball stage), about 15-18 minutes.
- Remove from heat and stir in the pecans and vanilla. Beat with a wooden spoon for about a minute, until the mixture just begins to thicken and turn slightly cloudy.
- Working quickly, drop spoonfuls onto the prepared sheets and let set at room temperature until firm, about 30 minutes.
