Sweet Potato Goat's Milk Bread

- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup mashed cooked sweet potato
- 1/2 cup whole goat's milk
- 2/3 cup brown sugar
- 2 large eggs
- 1/3 cup melted butter
Method
Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- Whisk the flour, baking soda, cinnamon, ginger, and salt together.
- In a separate bowl, whisk the sweet potato, goat's milk, brown sugar, eggs, and melted butter until smooth.
- Fold the wet ingredients into the dry just until combined.
- Pour into the prepared pan and bake 55-60 minutes, until a toothpick comes out clean. Cool 10 minutes before turning out.
