Sweet Potato Goat's Milk Bread

What you need

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup mashed cooked sweet potato
  • 1/2 cup whole goat's milk
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1/3 cup melted butter

Method

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Whisk the flour, baking soda, cinnamon, ginger, and salt together.
  3. In a separate bowl, whisk the sweet potato, goat's milk, brown sugar, eggs, and melted butter until smooth.
  4. Fold the wet ingredients into the dry just until combined.
  5. Pour into the prepared pan and bake 55-60 minutes, until a toothpick comes out clean. Cool 10 minutes before turning out.
