What you need

Ingredients

  • 2 1/2 cups Unsweetened Hemp Milk
  • 1/2 cup Sugar
  • 1 tsp Agar-Agar Powder
  • 1 Vanilla Bean, split and scraped (or 1 tsp extract)
  • Fresh Berries, to serve

Method

Instructions

  1. Whisk the hemp milk, sugar, and agar-agar powder together in a saucepan.
  2. Bring to a full boil, whisking constantly — agar-agar requires a boil to activate, unlike gelatin.
  3. Boil for 2 full minutes, still whisking, then remove from heat and stir in the vanilla bean scrapings.
  4. Divide among ramekins or glasses and let cool at room temperature for 10 minutes.
  5. Refrigerate at least 3 hours, until fully set, and serve with fresh berries.
