Potato Milk Caramel Sauce

A rich caramel sauce finished with potato milk, which thickens the sauce further as it cools.

What you need

Ingredients

  • 1 cup Sugar
  • 1/4 cup Water
  • 3/4 cup Potato Milk, warmed
  • 2 tbsp Butter
  • 1/2 tsp Flaky Sea Salt

Method

Instructions

  1. Combine the sugar and water in a heavy saucepan over medium heat and cook without stirring until deep amber, 8 to 10 minutes.
  2. Remove from heat and carefully whisk in the warmed potato milk, it will bubble vigorously.
  3. Return to low heat and simmer 2 to 3 minutes, until slightly thickened.
  4. Whisk in the butter and stir in the flaky salt.
  5. Cool slightly before serving warm, or cool completely and refrigerate.
