Creamy Thai Red Curry

What you need

Ingredients

  • 2 tbsp Neutral Oil
  • 3 tbsp Red Curry Paste
  • 1 stalk Lemongrass, bruised
  • 1 tbsp Fresh Ginger, grated
  • 1 1/2 cups Rice Milk
  • 1 cup Vegetable Broth
  • 1 tbsp Cornstarch, mixed with 1 tbsp water
  • 2 cups Mixed Vegetables
  • 1 tbsp Fish Sauce or Soy Sauce

Method

Instructions

  1. Heat the oil in a wok or pot over medium heat and fry the curry paste, lemongrass, and ginger for 2 minutes until fragrant.
  2. Pour in the rice milk and vegetable broth, stirring to combine.
  3. Add the mixed vegetables and simmer over medium heat for 12 to 15 minutes until tender.
  4. Stir in the cornstarch slurry and fish sauce, and simmer 2 to 3 minutes until slightly thickened.
  5. Remove the lemongrass and serve over rice.
