Raspberry Clafoutis

What you need

- 1 1/2 cups Fresh Raspberries
- 3 large Eggs
- 1/2 cup Sugar
- 3/4 cup Rice Milk
- 1/2 cup All-Purpose Flour
- 1 tsp Vanilla Extract
- Pinch of Salt
- Powdered Sugar, to finish
Method
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish or cast-iron skillet.
- Scatter the raspberries evenly across the bottom of the prepared dish.
- Whisk the eggs and sugar together until pale, then whisk in the rice milk, flour, vanilla, and salt until smooth.
- Pour the batter over the raspberries.
- Bake 30 to 35 minutes, until puffed and golden at the edges and just set in the center. Dust with powdered sugar and serve warm.
