Sweet Potato Biscuits

What you need

  • 2 1/2 cups All-Purpose Flour
  • 1 tbsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 1/2 cup Cold Butter, cubed
  • 3/4 cup Mashed Cooked Sweet Potato
  • 1/2 cup Cold Rice Milk

Method

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment.
  2. Whisk the flour, baking powder, baking soda, and salt together.
  3. Cut the cold butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the mashed sweet potato, then add the cold rice milk and stir just until the dough comes together.
  5. Pat to 3/4-inch thickness, cut into rounds, and bake 15 to 18 minutes until golden.
