Sweet Potato Biscuits

What you need

- 2 1/2 cups All-Purpose Flour
- 1 tbsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Salt
- 1/2 cup Cold Butter, cubed
- 3/4 cup Mashed Cooked Sweet Potato
- 1/2 cup Cold Rice Milk
Method
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment.
- Whisk the flour, baking powder, baking soda, and salt together.
- Cut the cold butter into the flour until the mixture resembles coarse crumbs.
- Stir in the mashed sweet potato, then add the cold rice milk and stir just until the dough comes together.
- Pat to 3/4-inch thickness, cut into rounds, and bake 15 to 18 minutes until golden.
