Mango Pomelo Sago with Soy Milk

A refreshing cold dessert soup of mango, pomelo, and sago pearls in a lightly sweetened soy milk base.

What you need

  • 2 ripe Mangoes, cubed, divided
  • 2 cups Unsweetened Soy Milk
  • 1/4 cup Sugar
  • 1/3 cup Small Sago Pearls, cooked and cooled
  • 1/2 cup Pomelo or Grapefruit Segments

Method

Instructions

  1. Blend half the mango cubes with the soy milk and sugar until smooth.
  2. Chill the mango soy milk base thoroughly, at least 2 hours.
  3. Cook the sago pearls according to package directions until translucent, then rinse in cold water and drain.
  4. Divide the chilled mango soy milk base among bowls.
  5. Top with the remaining cubed mango, pomelo segments, and cooked sago pearls.
