Soy Milk Coffee Jelly

Coffee-flavored agar jelly cubes served in a pool of lightly sweetened soy milk, a Japanese cafe classic.

What you need

  • 2 cups Strong Brewed Coffee
  • 1/3 cup Sugar, divided
  • 1 tsp Agar-Agar Powder
  • 1 1/2 cups Unsweetened Soy Milk
  • Ice Cubes, for serving

Method

Instructions

  1. Whisk the coffee, half the sugar, and the agar-agar powder together in a saucepan.
  2. Bring to a full boil, whisking constantly, and boil 2 minutes.
  3. Pour into a shallow dish and chill until fully set, about 2 hours, then cut into cubes.
  4. Whisk the remaining sugar into the soy milk until dissolved.
  5. Divide the coffee jelly cubes among glasses, pour the sweetened soy milk over the top, and add ice cubes before serving.
