Soy Milk Kefir

A tangy, effervescent fermented soy milk drink made with live kefir grains.

What you need

Ingredients

  • 4 cups Unsweetened Soy Milk, room temperature
  • 2 to 3 tbsp Active Kefir Grains
  • 1 tbsp Honey (optional)

Method

Instructions

  1. Place the kefir grains in a clean glass jar and pour the soy milk over them.
  2. Cover loosely with a breathable cloth secured with a rubber band, not sealed airtight.
  3. Let sit at room temperature, out of direct sunlight, for 24 hours, until slightly thickened and pleasantly sour.
  4. Strain out the kefir grains and reserve them for your next batch.
  5. Sweeten with honey if desired and refrigerate the finished kefir; use within 1 week.
