Soy Milk Laksa-Inspired Curry

A soy milk take on the classic Southeast Asian curry noodle soup, using soy milk in place of coconut milk for a leaner broth.

What you need

Ingredients

  • 2 tbsp Neutral Oil
  • 3 tbsp Laksa Paste
  • 1 1/2 cups Unsweetened Soy Milk
  • 2 cups Chicken or Vegetable Stock
  • 1 tbsp Fish Sauce
  • 8 oz Rice Noodles
  • Bean Sprouts, Boiled Egg, and Cilantro, to finish

Method

Instructions

  1. Heat the oil and fry the laksa paste over medium heat for 2 minutes until fragrant.
  2. Pour in the soy milk and stock, stirring to combine.
  3. Bring to a gentle simmer over medium-low heat, then add the fish sauce.
  4. Cook rice noodles separately according to package directions.
  5. Assemble bowls with noodles, broth, bean sprouts, boiled egg, and cilantro.
