Soy Milk Panna Cotta

What you need

  • 2 1/2 cups Unsweetened Soy Milk
  • 1/2 cup Sugar
  • 1 tsp Agar-Agar Powder
  • 1 tsp Vanilla Extract
  • Fresh Berries, to serve

Method

Instructions

  1. Whisk the soy milk, sugar, and agar-agar powder together in a saucepan.
  2. Bring to a full boil, whisking constantly, agar-agar requires a boil to activate, unlike gelatin.
  3. Boil for 2 full minutes, still whisking, then remove from heat and stir in the vanilla.
  4. Divide among ramekins or glasses and let cool at room temperature for 10 minutes.
  5. Refrigerate at least 3 hours, until fully set, and serve with fresh berries.
