Soy Milk Red Bean Popsicles

Creamy popsicles layering sweetened red bean paste and soy milk, a nod to classic East Asian red bean treats.

  • 1 cup Unsweetened Soy Milk
  • 1/4 cup Sugar
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Sweetened Red Bean Paste

Method

Instructions

  1. Whisk the soy milk, sugar, and vanilla together until the sugar dissolves.
  2. Spoon alternating layers of the soy milk mixture and red bean paste into popsicle molds, swirling gently with a skewer.
  3. Insert sticks and freeze for a minimum of 6 hours, or until completely solid.
  4. Dip molds briefly in warm water to release the popsicles.
  5. Serve immediately.
