Camel Milk Mushroom Bisque
Earthy mushrooms simmered into a rich bisque, finished with camel milk for a lighter body than a cream version.

What you need
Ingredients
- 3 tbsp Butter
- 1 lb Mixed Mushrooms, sliced
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 3 cups Vegetable Stock
- 1 cup Camel Milk
- Fresh Thyme, to finish
Method
Instructions
- Melt the butter and sear the mushrooms until deeply golden, about 8 minutes. Reserve some for garnish.
- Add the onion and cook until soft, then add garlic and cook 1 minute.
- Add the stock and simmer 15 minutes.
- Purée until smooth, remove from direct heat, and stir in the camel milk.
- Warm gently, garnish with reserved mushrooms and fresh thyme.
