Camel Milk Tapioca Pudding

Small pearl tapioca cooked slowly in camel milk for a comforting, old-fashioned pudding.

What you need

  • 1/3 cup Small Pearl Tapioca, soaked 30 minutes
  • 3 cups Camel Milk
  • 1/3 cup Sugar
  • 1 large Egg, beaten
  • 1 tsp Vanilla Extract

Method

Instructions

  1. Drain the soaked tapioca and combine with the camel milk and sugar in a saucepan.
  2. Bring to a gentle simmer over medium heat, then reduce to low.
  3. Cook, stirring frequently, for 20 to 25 minutes, until the tapioca pearls turn translucent.
  4. Temper the beaten egg with a few tablespoons of the hot pudding, then stir it back into the pot.
  5. Cook 2 more minutes, stirring constantly, until slightly thickened. Stir in the vanilla and serve warm or chilled.
